Healthy Chocolate Cake

Ingredients

3 eggs

1 cup cooked sweet potato (about 1 1/2 small sweet potatoes or 3/4 of a bigger one. Measure it to be sure!)

1 cup Greek yogurt

1/2 cup almond butter

1 tbsp vanilla

2 1/2 cups almond flour

1 cup cacao powder
-
1 cup coconut sugar

2 tsp baking soda

Pinch of sea salt
Frosting Ingredients:

1 bar of Vine to Bar dark chocolate, melted

1/3 cup sour cream
Directions

Preheat oven to 350 F.

In a bowl, add all wet ingredients and mix.

Add all dry ingredients and mix to incorporate.

Pour into cake pan or baking dish and bake for about 30 min or until a fork comes out mostly clean.

Cool completely before topping with frosting.
- To make frosting: In a bowl, add melted dark chocolate and sour cream. Mix really well. If it’s not sweet enough as is, you can add a little more dark chocolate or coconut sugar. I did not need to add any.
