Chocolate Chunk Zucchini and Banana Muffins | Vine to Bar

  • 1 ¼ cup oat flour
  • ½ cup almond flour
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 small zucchini, grated
  • 3 small very ripe bananas, mashed
  • 2 eggs
  • 2/3 cup unsweetened greek yogurt
  • 1 small zucchini, grated
  • 1/3 cup pure maple syrup
  • ½ cup melted and cooled coconut oil
  • Splash vanilla extract
  • 8 Vine to Bar Original Dark Chocolate Tasting Squares, chopped


  1. In a small mixing bowl combine the flours, baking soda, baking powder, and salt. Mix until combined.
  2. Strain the grated zucchini in a fine mesh strainer or nut milk bag to remove all of the excess liquid.
  3. In a large mixing bowl, whisk together the bananas, eggs, yogurt, maple syrup, coconut oil, and vanilla until combined. Fold in the zucchini.
  4. Fold in the dry mixture until just combined. Do not overmix. Carefully fold in the chopped dark chocolate.
  5. Preheat the oven to 350 degrees Fahrenheit and line a muffin tin with liners. Fill each liner until ¾ of the way full. The batter should make about 16 muffins in a standard-size muffin pan.
  6. Bake for 20-30 minutes or until a toothpick comes out clean or just with a few crumbs left. Begin checking at the 20 minute mark.
  7. Let cool completely before serving and enjoy!
