Cashew Cacao Gut-Friendly Frosting | Vine to Bar

Ingredients

  • 2 cups raw cashews

  • Water

  • 1 cup chopped Vine to Bar True Dark Chocolate

  • 1 tbsp coconut oil

  • ¼ cup cocoa powder

  • ¼ cup pure maple syrup

  • 1 tsp vanilla bean paste

  • ¼ tsp salt

Directions

  1. Place the cashews in a bowl and cover with hot water. Let soak for one hour, then strain.

  2. Add the cashews to a high-speed blender along with ¾ cup water. Begin to blend on low, then slowly speed up and blend on high until the cashew cream is smooth. You may need to scrape down the sides as needed. If the mixture is too thick, add 1-2 tbsp of water at a time.

  3. Meanwhile, melt the chocolate with the coconut oil in the microwave in 20 second increments, stirring between until melted. Let cool.

  4. To a stand mixer add the cashew cream, melted chocolate, cocoa powder, maple syrup, vanilla, and salt. Stir to combine.

  5. Remove the bowl from the stand and place into the fridge for 1 hour to chill.

  6. Remove from the fridge and place back onto the stand mixer with the whisk attachment.

  7. Mix on medium high speed for about 1-2 minutes or until the mixture is lighter in color and stiff peaks form when you remove the whisk.

  8. Serve on top of cakes, cupcakes, alongside fruit, etc, and enjoy!
