Dark Chocolate Dipped Peanut Butter Cookies | Vine to Bar

Ingredients
- 1 cup all-natural creamy peanut butter
- ¾ cup coconut sugar
- 1 egg
- ½ tsp baking soda
- 1 tsp vanilla
- Pinch of salt
- 1 Vine to Bar Dark Chocolate Bar
- 1 tsp coconut oil
Directions
- Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet or two with parchment paper.
- In a large bowl, whisk together the peanut butter, coconut sugar, egg, baking soda, vanilla, and salt until completely combined.
- Roll into 12 cookies and place on the baking sheet, spacing them apart as they will spread while baking. Use a fork to press down and make a pattern on the dough.
- Bake for about 10 minutes until slightly golden but still soft.
- While the cookies are cooling, melt the chocolate and coconut oil over a double boiler.
- Once the chocolate is melted, dip half of each cookie into the melted chocolate and place back on a lined baking sheet.
- Sprinkle with flaky salt and let set in the fridge until the chocolate hardens and enjoy!
